Grapes separated from the stems and soft pressed
Held in 10 hectoliter

Liquid is drawn from the bottom and pumped over the cap daily

Svinatura – separation of liquids from solids
Spontaneous malolactic fermentation
Aging and Bottling
Aged for several months in 225 liter French oak barriques
Bottled in
750 ml bottles and left to rest
Not filtered, possibility of natural sediments
in the bottle (tartrates)
Food Matches
For all types of meat dishes, naturally roasted meats and la Bistecca alla
Fiorentina, and pappa al pomodoro, pork with Vin Santo.

For merits of quality it was admitted to the permanent exposition
of the Enoteca Italiana of Siena
